Apple Stilton Tart
1 basic tart shell (use your favorite recipe)
2 pippin apples, very tart, one sliced, one diced
1/4 lb. + 2 T. Stilton (rind removed)
1 1/2 c. half and half
4 eggs
1/3 c. green onions, chopped
salt
pepper
nutmeg
butter
Preheat oven to 375 degrees F. Make tart shell and line tart pan. Peel, core and dice one of the apples. In a food processor combine and mix Stilton, half and half, eggs, onions and spices. Add diced apple and pulse just to mix slightly. Pour into crust. Slice the remaining apple into very thin slices and top the tart with it. Bake on cookie sheet in preheated oven for 15-20 minutes or until knife tests done. Serve warm.
