Arugula Salad with Baked Goat Cheese
goat cheese log
bread crumbs
olive oil
arugula
1/2 teaspoon dijon mustard
1 1/2 tablespoons red wine vinegar
5 tablespoons extra virgin olive oil
salt and pepper
Cut the goat cheese log into slices. Coat each slice in olive oil then roll in bread crumbs to coat. Grease a baking sheet with olive oil and place goat cheese rounds on top. Bake until goat cheese is heated through.
Meanwhile, wash and dry arugula. In a small bowl, combine 1/4 t salt, the mustard, and the vinegar. Whisk in olive oil. Adjust oil and vinegar to taste. When ready to serve, toss salad greens with the vinaigrette. Place goat cheese rounds on top.
