Peasant's Salad (Coban Salatasi)
4 tomatoes, quartered
1 small onion, sliced very fine,
1 green bell pepper, seeded and cut into thin rings
1 cucumber, peeled and sliced
10 black or green olives
small cube of feta cheese
some parsley, chopped
2 hard boiled eggs, quartered
1/2 lemon juice
Olive oil
Salt
Toss all the ingredients gently in a bowl. Add eggs at the end on top of the other ingredients. Serve fresh French baguette type white bread with it, to dip the juices.
