Summer Salad with Sweet Corn, Green Beans, and Tomatoes

Salad mix
2 ears sweet corn, kernels shaved off cob with a knife
1/2 lb green beans, trimmed and cut in bite-sized pieces
2 large heirloom tomatoes
4T Olive oil
2T Balsamic vinegar

Blanch green beans in boiling water for 2 minutes. Toss all ingredients together.

Serves: 6
