Broccoli with "Nhopi" (Zimbabwean Ambrosia)
1 cup corn/maize meal
2 cups water
1/2 lb pumpkin, cooked and mashed (retain cooking water)
1/2 tsp sugar
2 tablespoons peanut butter (I used chunky fresh peanut butter)
salt
1 lb. broccoli, steamed
1. Bring the water to the boil and put in the corn/maize meal. Cook, stirring frequently, until it forms a porridge.
2. when it is ready, mix in the mashed pumpkin. Then add the sugar, peanut butter and salt and combine all the ingredients well.
3. continue to cook for a few minutes, adding about 1/2 cup of the retained pumpkin cooking water if necessary to make the consistency you prefer. Serve immediately with spinach, broccoli or other green vegetable.
Serves: 6-8
