Fresh Fruit Clafoutis
1 lb. apricots
1/4 lb. berries
2/3 c. flour
3 eggs
2 T. sugar
3/4 c. milk
1 pinch salt
2 T. butter (to butter pan)
2 T. sugar (to finish)
Preheat oven to 375 degrees. Pit the apricots and cut into small pieces. Set the apricots and berries aside.
Place the flour in a mixing bowl. Add the eggs, sugar, and salt and whisk until smooth. Add the milk, 1/4 cup at a time and whisk well.
Butter a 10 inch pie or cake pan. Stir fruit into the batter and pour into the pan. Bake 25-30 minutes until golden brown. Remove from the oven and sprinkle with sugar.
Serve hot or cold.
