Roasted Yukon Gold Potatoes with Rosemary
2 lbs. small Yukon Gold potatoes, cut into quarters
1 branch fresh rosemary, removed from the stem
2 T. olive oil
Salt & Pepper to taste
Preheat the oven to 375F.
In a large bowl mix all ingredients and place on a shallow baking sheet covered with foil or sprayed with oil. Bake for about 1 hour until potatoes are tender inside and crispy on the outside.
Serves: 4-6
