Cucumber Lime Agua Fresca
(I tripled this recipe to fill a large glass pitcher.)
1 large hothouse cucumber, peeled and cut into chunks
2 cups cold water
Juice of 2 limes
3 tablespoons sugar
1/4 teaspoon kosher salt
Mint sprigs for garnish
Put the cucumber chunks in a blender. Add the water, lime juice, sugar and salt. Liquefy until very smooth. Strain through a fine mesh sieve, pressing on the solids to get out as much liquid as possible. Refrigerate until chilled.
Serve with a sprig of mint.
Per cup: 70 calories, 1 g protein, 17 g carbohydrate, 0 fat, 0 cholesterol, 178 mg sodium, 1 g fiber.
Serves: 3 cups
