Peach and Blueberry Salad
6 peaches (white or yellow or a mix), cut into 2-inch pieces
1 quart blueberries, rinsed
10 leaves mint, chopped finely
juice of 1-2 limes
Mix everything together in a bowl, adding the mint just before serving to keep it bright green.
